We celebrated St. Patrick’s Day at Coppertop with a dinner feast of corned beef, boiled potatoes, steamed cabbage, and applesauce. The cabbage and apples came from our 2014 harvest. My ⅛ Irish roots savored every morsel. Just before we ate we were treated to a magnificent double rainbow. The pot of gold at the end beckoned to us — the stretched parents of a spring bride-to-be!
